The journey begins in spring, the season of rebirth, nature awakening and flourishing. A time when vegetables such as artichokes, asparagus, or peas return to the kitchens and flavors like red fruits, avocado, or grapefruit take center stage.
The gastronomic proposal features the participation of three renowned chefs in each season, who create their recipes inspired by seasonal products and the time of the year.
The spring collection kicks off the culinary journey in which Julian Mármol, a Michelin-starred chef, presents his Sorlut Oyster with Yuzu Ponzu, kefir, spirulina and crispy codium, an explosion of flavors in one bite.
In May, chef Pepa Muñoz from El Qüenco de Pepa restaurant and president of FACYRE dresses her Sorlut Oyster with tomato concentrate, red onion, and fried capers, sharing the spotlight with seasonal products.
The season culminates with the proposal of Javier Muñoz, chef of the Palacio de Cibeles restaurant, who accompanies his Sorlut Oyster with aloe vera ceviche, cilantro, and red onion, giving rise to an explosion of flavors.

The spring collection of oysters will be exclusively available at the Ostras Sorlut corner in the Food Hall of Galería Canalejas starting on April 14. The creations of Julian Mármol, Pepa Muñoz, and Javier Muñoz will be available for a limited time until May 5, from May 6 to May 27, and from May 28 to June 18, respectively.
Galería Canalejas is the new hotspot for food lovers and foodies in Madrid. The Food Hall offers more than 30 spaces of different styles and nationalities, with the presence of private spaces of great flagship restaurants, Michelin stars, high-quality pastry, and more informal common areas.
